Recipe: kartoshka cake


The is one of the easiest Russian desserts to make. Kartoshka means potato, yet there's no potato in it... the lying bastards! [edit: my wife's just called me a hypocrite on the basis of mince pies not containing mince... touché!] Still, it's delicious and ridiculously moreish.

Ingredients:
250g plain biscuits, e.g. rich tea
2 heaped dessertspoons sugar
1 dessertspoon margarine
2 heaped dessertspoons cocoa powder
½ glass milk
a little dessicated coconut, for decoration [optional]


How:
1. crush biscuits into a powder; add cocoa powder and mix thoroughly
2. put milk, margarine and sugar in a microwavable bowl; microwave until margarine melts and sugar dissolves into the milk, stirring with a spoon if necessary
3. add the milk mix to the biscuit mix; stir together. It should bind together, slightly mushy, but not dropping off a spoon - if it doesn't bind, add a little milk
4. while the mix is still warm, shape it however you want it - little balls; rolls; leave it to set in small bowls; sprinkle with the coconut if you want
5. leave to set in the fridge


Variations:
You can replace dairy milk with soya/almond milk or use soya spread to make it vegan and it still comes out tasty.
